Many of us think that poha is not meant for keto-followers but here we have an interesting recipe for you which can help you prepare tasty keto poha at home.
Instructions
Firstly, wash & grate the cauliflower.
Shape and cut the stem into cubes to resemble potatoes.
Now, boil the stem in salted water till it becomes tender (or tentatively 10 mins).
Dry roast the peanuts in a frying pan till they get a nice golden brown color and keep it aside.
Now in the pan heat 1 tbsp butter (or 1 tbsp olive oil alternatively you can use 2 tbsp of ghee instead)
Add in the mustard seeds and once they start popping add the curry leaves and the onions.
Now add a pinch of salt and turmeric and fry out the spice.
Then add in the peanuts and green chilies and cook for 1 minute or so.
Now add cauliflower rice, season with salt, add a splash of water and cover and cook till tender.
When cauliflower is cooked add in the fake potatoes(stems) and give it all a good mix.
Now garnish with coriander & lemon juice.
